Vrat Recipe: Makhana Kheer Recipe

Makhana or Phool Makhana is also known as Fox nut and is very commonly used during any fast. Phool makhana is bascially lotus seed, whose outer layer is puffed just like popcorn. Its centre part is not edible as it tastes very bitter. Because Navratras are coming and i know that i have to plan the diet for Navratras vrat as many of my clients observe fasts during these days. So, i thought that i should start posting the recipes of the dishes which are allowed during the fasts.

Makhana Kheer has always been my personal favourite as a) it is sweet b) it is so easy to make. You can have it either cold or hot as it doesn't really matter because i am sure you will forget everything as soon as you put it in your mouth. It's creamy texture says it all. You are not going to feel it until you taste it. So, let's walk through the recipe so that you can taste this heavenly delicacy yourself. But before that, being a dietitian its my duty to explain you little benefits of these makhanas as i want you to include it in your diet. Don't worry, i would not take that long.
Health benefits of Makhana/Phool Makhana:
It is an excellent option for popcorn as it is low in Sodium and high in Potassium. The lower content of Sodium will not let your blood pressure increase and the high Potassium will help in regulating it.
It also acts as a wonderful option for insomniac people as it helps in triggering the sleep. Instead for having sleeping pills, its much better to opt for Phool Makahna.
It increases your fertility too. So, if you are trying to conceive, you should definitely include Phool Makhana in your diet.
It is rich in Calcium. So, women should definitely consume it in their diet. Plus they are low in calories, high in fiber and low in fat too. So, it is the best snack you can opt for.
Phool Makhana is gluten-free and having so much of nutritional value, it is an excellent snack for gluten-intolerant people.

There are so many other health benefits of this light food that you are left with no reason to not include this food in your dietary regime.
Recipe:
Ingredients:
Makhana/Fox nut: 100g
Milk: 4-5 cups
Sugar: 3 tbsp
Ghee: 1 tsp
Raisins: 1 tsp
Chopped Almonds: 1 tsp
Chopped Cashew nuts: 1 tsp
Cardamom: 2 (Peel Removed)
Method:
In a heavy bottom pan, melt ghee and roast the makhanas. If you are watching your calories, you can avoid using ghee and just dry roast the makhanas.
When roasted, keep them aside to cool down to room temperature.
Then take half of the makhanas and grind them coarsely in a grinder.
In the same pan, bring milk to boil and add cardamom seeds. Simmer the stove and let it cook for few minutes so that it becomes little thick.
When little thickened, add both, powdered and whole makhanas.
Let it cook till the makhanas get soft or cooked. It will take around 10 minutes.
Cover the lid and keep stirring it in between so that the mixture does not stick to the bottom of the pan and also to keep a check on makhanas that they have cooked or not.
Your Makhana Kheer is ready when the makhanas get soft.
Garnish it with raisins, chopped almonds and chopped cashew nuts and serve hot or cold, as you like it.
